Buffalo & Bleu


Yields 1 Serving

Ingredients:
Boneless Wings-
·      6 oz Boneless Skinless Chicken Breast
·      ½ Cup Hot Sauce (to taste)
·      3  Slices Low Sodium Ezekiel Bread
·      1/8 Cup Potato Flakes
·      1/8 Cup Egg Whites
·      Olive Oil Spray

Blue Cheese Dressing-
·      ¼ Cup Crumbled Blue Cheese
·      3 oz Plain 0% Fat Greek Yogurt
·      1 tsp Light Mayonnaise
·      1 tsp Lemon Juice
·      1 tsp White Wine Vinegar
·      1/8 tsp Garlic Powder
·      salt and pepper, to taste

Directions:

Trim chicken breast and cut into wing-sized cubes.  Place in small To-Go container and cover with hot sauce.  Marinate in Refrigerator for about 2 hours.  * Add a Truvia packet for a Sweet & Hot flavor!

Preheat Oven to 350.  Spray a baking pan with olive oil spray.

In blender, blend Ezekiel bread until crumbs form.  Pour into a bowl and stir in potato flakes.  Pour egg whites into a separate bowl.  When done marinating, dip the chicken into the egg whites and then cover with bread crumbs.

Place breaded wings onto baking pan and bake for about 15-20 minutes, checking and turning over halfway through.

While wings are baking, combine all of the dressing ingredients.

Enjoy your wings and blue cheese dressing with some carrot

And celery sticks!
