PB2 Chicken Satay
Yields 4 Servings
1 Serving = 4oz chicken + ¼ PB2 Sauce
Ingredients:
Chicken-
·
1 lb Boneless, Skinless Chicken Breast, sliced
into strips
·
1 Cup Plain 0% Fat Greek Yogurt
·
2 Tbsp Coconut Milk
·
1 Tbsp Curry Powder
·
1 tsp Minced Garlic
·
6 large wooden skewers (optional)
*Soak in water to prevent burning
PB2 Sauce-
·
4 Tbsp PB2 Powder
·
1 Tbsp Lime Juice
·
2 Tbsp Low Sodium Soy Sauce
·
1 Tbsp Brown Sugar
·
3 Tbsp Hot Water (Depending on your preferred
consistency)
Directions:
Mix together marinade ingredients in a shallow dish, add
chicken, cover and let marinate for 2 hours in refrigerator.
Mix together peanut sauce ingredients- adding water last and
very slowly, continue stirring as you add so it doesn’t get too watery.
To cook chicken:
Put chicken strips on skewers. Arrange on a parchment-lined baking
sheet.
Broil for 5-10 minutes, checking halfway through. Be sure chicken is no longer pink in the
center.
Remove and serve with PB2 Sauce.
