Happy Salad



Yields 4 Servings
1 Serving = ½ Head Lettuce + 1 Cup Happy Mix

Ingredients:
·      16 oz grilled Chicken Breast, chopped
·      1 Small Haas Avocado, chopped
·      1 Cup Mango, chopped
·      2 Tbsp Red Onion, diced
·      2 Heads Baby Butter Lettuce
Vinaigrette:
·      2 Tbsp Olive Oil
·      2 Tbsp White Balsamic Vinegar
·      Salt and Pepper, to taste

Directions:

Whisk vinaigrette ingredients in a small bowl, set aside.

Toss chicken, mango and onion together.  Fold in avocado to avoid mashing.  Fill 4 plates with lettuce and top with ¼ of the mixture.  Drizzle with vinaigrette.


*For meal prepping: If you can, hold off on adding the avocado as long as possible.  I would only make it up to 3 days in advance, otherwise the avocado browns too quickly.
