Guacky Deviled Eggs



Yields 3 Servings
1 Serving = 2 Eggs (4 halves)

Ingredients:
·      6 Large Eggs, hard-boiled
·      1 Small Haas Avocado
·      2 tsp Fresh Lime Juice
·      1 tsp Red Onion, minced
·      1 Tbsp minced jalapeno
·      1 Tbsp Fresh Cilantro, chopped
·      1 Tbsp Diced Tomato
·      ¼ Cup Plain 0% Greek Yogurt
·      salt and pepper, to taste
·      Pinch Chili Powder (garnish)

Directions:

Peel the cooled hard-boiled eggs.

Cut the eggs in half lengthwise and keep 1 yolk, discard the rest.

In a medium bowl, mash the one egg yolk, avocado, and greek yogurt together.  Add lime juice, red onion, jalapeno, cilantro, salt and pepper.  Fold in the diced tomato.


Scoop the guacamole back into the egg white halves and garnish with a sprinkle of chili powder.
