Hebrew Mac N’ Cheese Casserole



Yields 9 Servings
1 Serving = 1/9 of the pan

Ingredients:
·      2 Packages Hebrew 97% Lean Hot Dogs
·      4 oz Ground Turkey
·      1 Cup Veggie Spirals
·      2 Tbsp Light Margarine
·      ¼ Cup Whole Wheat Flour
·      ¼ Cup Minced Onion
·      2 Cups Skim Milk
·      1 Cup Low Sodium Fat Free Chicken Broth
·      1 Cup Fat Free Chedder Cheese
·      1/8 Cup Low Fat Grated Parmesan
·      Olive Oil Spray

Directions:

Cook pasta according to directions.  Spray a casserole with olive oil. Preheat oven to 375.

Brown ground turkey in a large skillet, drain and place in casserole.

Chop hot dogs into small, bite-sized pieces and add to casserole.  Add cooked pasta.

Return skillet to heat and melt margarine.  Whisk in flour, followed by onion.  Whisk ingredients while cooking for another 2 min.  Add milk and chicken broth as you continue whisking and gradually raising the heat.  The sauce will come to a boil and become thick- immediately remove from heat and add cheese, salt and pepper.

Pour over the other ingredients in casserole.  Top with grated cheese


Bake for 15-20 min.  If you like a crispy top, broil for a few minutes at the end!
