Cheeseburger Casserole



Yields 9 Servings
1 Serving = 1/9 of the pan

Ingredients:

·      1 Cup Veggie Pasta
·      2 tsp Olive Oil
·      1 ½ Cup Onions, finely chopped
·      1 Garlic Clove, minced
·      2 lb 95% Lean Ground Beef
·      2 Tbsp Tomato Paste
·      28 oz Diced Tomatoes
·      2 Cups Fat Free Shredded Cheddar Cheese

Directions:

Preheat the oven to 350 degrees. Spray a 9X13 casserole with olive oil spray.  Cook pasta according to package directions.  Drain and add to casserole.

In a large skillet, heat oil over medium-low heat.  Add onions and sauté until clear, add garlic and beef. Cook until meat is no longer pink, drain fat. 

Add tomato paste and diced tomatoes.  Season with salt and pepper.  Let the sauce simmer for about 2 minutes.


Add mixture to casserole, top with cheese and bake for about 15 minutes, or until cheese is melted.
