Amped up Amy’s Thai Coconut Curry

Recipe yields four 300 calorie servings, each with 35% protein.  This is a great quick soup.  Just toss the ingredients into your slow cooker and let cook on high heat overnight.

Ingredients:

2 cans Amys Thai Coconut
12oz chicken breast, cut into nugget-sized pieces
1 bag frozen baby Brussels sprouts

Added curry or chili powder, to taste
