Salted
Caramel Truffles
Yes, this is happening. Oh, and
they are raw, vegan, gluten-free, packed with antioxidants and make you happy!
Each Truffle has 10g protein and
100 calories, perfect energy source throughout and after a long workout
My recommendation: make 2 batches
Ingredients:
5 Dates, pitted
3 Scoops Vanilla Vegan Protein
Powder (Whey works great if you aren't vegan!)
1 Tbsp PB2 Powder (powdered
peanut butter)
1/2 Cup Almonds
1/4 tsp Caramel Extract
*optional, if you don't have it, they still taste like caramel*
1 Tsp Agave Nectar or Raw Honey
1/4 tsp Sea Salt
2 Tbsp Cacao powder (Baking cocoa
works too)
Instructions:
In a food processor: blend the
dates, protein powder, PB2, almonds, caramel extract, and agave nectar for
about 15 minutes, depending on your food processor. It will gradually form one
big ball of dough. If it is too dry after 20 minutes of processing, add just a
tiny bit of almond milk, but really try to be patient- it will be worth the
wait!
In a separate dish, combine the
sea salt and cacao.
Form the dough into 12 small
balls, and roll them each in the salt & cacao mix until evenly coated.
Store in fridge
Seriously, make 2 batches, maybe
more.
