Potato Salad
"You can't fix ugly" -
I'm sorry, but there aren't enough filters in the world to make potato salad
look appetizing to me. You just have to take my word for it- I do not like
potato salad, but this sweet potato salad is worth taking a little leap of
faith for.
I honestly just tossed this
together with mostly leftovers from last week's meal plan (the slow cooked
coconut curry chicken and a lone sweet potato with nothing to do). It has
plenty of protein, so feel free to experiment with your own modifications.
Ingredients:
4oz slow-cooked chicken
1 hard-boiled egg (whole)
8 hard-boiled egg whites (I give
Obi the yolks)
1 sweet potato, cooked, peeled,
cubed
1/2 cup greek yogurt
1/4 cup parmesan cheese
2 cups broccoli slaw- chop it in
food processor, 2 pulses
2 celery sticks, chopped
1 small onion, minced
1/4 cup dried cranberries or goji
berries (optional)
1/8 cup chopped walnuts
(optional)
seasoning: garlic, cinnamon, salt
& pepper
Instructions:
I already had everything cooked,
so this is what I did:
In a large bowl, combine chicken,
chopped eggs, onion, celery, and broccoli slaw. In the food processor, I
combined the sweet potato, cheese, greek yogurt, garlic, cinnamon, salt and
pepper. Process until it has a smooth consistency, and then mix in with the egg
and chicken mixture. Fold in the cranberries and walnuts and then add whatever
other fun things you want!
The recipe as I made it yields 4
servings of 200 calories, so you have space to work with when deciding what to
serve it with. I haven't decided yet, but I think I'm gonna have mine with
celery sticks- I know, I'm so wild and crazy! lol
Maybe a pita, on a bed of
lettuce, as a wrap...
Any other ideas?
