Cranberry Chocolate Bars


It is killing me to not eat this entire pan! Luckily, each bar has 8g protein and is only 100 calories- whew! The recipe yields 16 (100cal) bars.

Ingredients:
4 Medjool Dates, pitted
4 Scoops Isopure Dutch Chocolate Protein Powder
1/2 Cup Sliced Almonds
1 Tbsp PB2
1 Tbsp Cacao Powder (or 70% + cacao)
2 Tbsp Almond Milk

Toppings (optional, but highly recommended):
1/2 scoop Isopure Dutch Chocolate Protein Powder
2 Tbsp Coconut Flakes (organic, unsweetened)
2 Tbsp Dried Cranberries (homemade is best)
2 Tbsp Chopped Cashews

Instructions:

Combine the dates through cacao powder in your food processor. Process for 5-10 minutes, until the almonds have become powder- gradually add almond milk and continue to process. The mixture will develop into a "dough" and form into a ball, stop adding almond milk when the ball forms.

Spread the mixture into a square pan that is lined with parchment paper.

Sprinkle with cashews and cranberries, then flip over and cut into 16 squares.

In a bowl, combine the additional protein powder and coconut flakes.

Dip each bar in the powder and coconut mixture (this just makes them less sticky and more portable, you have the option of just coating one side or covering the whole bar).


Store in the refrigerator!
