“Strong is the new Sexy” Blondies:


Yields: 3 servings of 30g protein and 300 calories OR 9 servings of 10g protein and 100 calories

Ingredients:
1 can white beans, rinsed and drained
3/4 tsp baking powder
1/8 tsp baking soda
1/4 tsp salt
1 Cup Truvia Baking blend
2 tsp vanilla extract
2 Scoops Isopure unflavored protein powder
1 Tbsp PB2 powder
3 Tbsp 0% fat plain greek yogurt
4 unsweetened chocolate baking squares, chopped

Directions:

Preheat oven to 350 degrees. Blend all ingredients (except chocolate) until very smooth in a good food processor (not a blender). Do not over process! It should be a batter, not dough- if you over process, just add some almond milk or skim milk to lighten it up! Mix in chocolate, and scoop into a greased (or parchment-lined) 8x8 pan. Bake for around 20 minutes. They'll look a little undercooked when you take them out, they will have a super delicious spongy texture that keeps getting better if they are kept in the fridge (though I don't expect them to last that long!)
